Roasted Cauliflower



As the weather gets colder, I can’t help but roast everything in sight. Roasting vegetables is so incredibly easy and the best way to bring out its maximum flavor potential. If you have $2 to spend on what feels like a endless supply of cauliflower and a working oven, I suggest you do this immediately.

Roasted Cauliflower

1 cauliflower floret cut into bite-size pieces

1 yellow onion, halved and thickly sliced

olive oil

salt & pepper

Preheat oven to 450 degrees. Toss cauliflower and onions in olive oil, sprinkle generously with salt and pepper. Roast in oven for approx. 30 minutes or until vegetables are nice and brown.

    Aim -Have you tried to make roasted cauliflower soup. I tried one time but it came out stringy. Need to perfect this recipe but cauliflower soup is def a winter treat. (mix in cheddar or gruyere cheese and you’re all set)

    I like to do thin slices of garlic — cuz they get super crunchy and are perfect with the cauliflower. I also like puppies. because they get nice and crispy, too.
